Vegan Cocoa-Mocha Bars

OK. Where do I start??  Let’s just say these guarantee smiles!! They’re made of simple, all natural ingredients, and no ice cream maker is required!! All you’ll need is oats, dates, and cocoa for the base, canned coconut cream with agave and cocoa/coffee for the ice cream layers, and melted vegan chocolate and chopped nuts to fancy it up!!

Vegan Cocoa-Mocha Bars

Serves: 6 bars
These 3 layer Ice cream bars are indulgent, rich, and creamy!! They’re vegan, gluten free, and no ice cream maker is required!!
Ingredients
  • BASE:
  • 1.5 cups rolled oats
  • 3/4 cup pitted medjool dates (approx. 10-12)
  • 6 tablespoons cocoa powder
  • Chocolate ice cream layer:
  • 1 cup full fat coconut cream (refrigerated overnight)
  • 6 tablespoons agave
  • 1/4 cup cocoa powder
  • Coffee layer:
  • 1 cup full fat coconut cream (refrigerated overnight)
  • 1/2 cup strongly brewed cold coffee
  • 3 tablespoons agave
  • GARNISH:
  • 1/2 cup vegan chocolate chips (melted)
  • 1/4 cup chopped nuts
Instructions
  1. In a food processor or high speed blender, combine the in ingredients for the ‘base’. Pulse till fine.
  2. Press into pan lined with parchment paper and set aside.
  3. Rinse your blender/ food processor. Combine ingredients for chocolate ice cream layer and blend. Pour into pan over the base. Chill in freezer.
  4. Again, rinse your blender/food processor and blend ingredients for the mocha ice cream layer. Once the chocolate layer is frozen, pour it on top and stick it back in the freezer.
  5. Once completely frozen, remove from pan thaw for a couple minutes and slice it up!
  6. Drizzle the melted chocolate on top and sprinkle some chopped nuts! ENJOY!!
